Frozen Peanut Butter Chocolate Covered Dates

I need to start this post with a disclaimer that this treat will not be a problem to bite into, even when eaten straight from the freezer. I have never been one who could bite a popsicle because the chills would immediately go from my teeth all over my body. Hate the sensation. This is different. AND it tastes like a snickers bar but is way healthier. (And so easy to make.) It’s a new obsession, truly.

I should mention that I normally do NOT eat dates. It’s hard to get past the look of them after someone told me they look like cockroaches and now I can’t unsee it. (I know I know I’m sorry for putting that in your head now.) But it’s worth it to work past that ick and make these. Trust me.

Start by splitting pitted dates in half lengthwise without cutting all the way through. (You’re making a pocket.) Fill the dates with peanut buter (any kind you like – I go with basic, creamy JIF). Then, melt dark chocolate chips with a spoonful of coconut oil in the microwave (30 second intervals). Use two forks to cover the dates in the chocolate and place on a parchment- or wax-lined baking sheet. Sprinkle with maldon salt. Freeze.

I tried a couple different versions (pictured above both pre- and post-coating/topping. For some, I stuffed with both peanut butter AND vanilla greek yogurt (to make it like an ice cream bar). That I wasn’t as crazy about because the frozen yogurt did, in fact, give me the chills when I bit into it. Some I sprinkled with shredded coconut (really liked) and some with sprinkles (didn’t love). You could also do crushed peanuts or use crunchy peanut butter if you want that texture, but the freezer gives the chocolate that crisp you might be looking for. Basically, you’ve got options but the most basic recipe described above is easy and pretty perfect on its own. It’s the best after dinner treat.
